1lb of chicken
1c of rice
2c cheese
1c finely cut up broccoli
1c chicken broth
1/2c milk
1 stick of butter
1 can cream of chicken soup
Cook chicken in boiling water until done. Cook rice according to directions. Dice chicken into 1/4" -1/2" cubes, and add to cooked rice, and cooked broccoli. Stir.
Stir in remaining ingredients to mixture and add cheese on top. Cook at 350 degrees for 30 minutes.
Optional:
Sprinkle a layer of crushed Ritz crackers OR Corn Flakes to top of casserole, about 5-8 minutes prior to being done, and return to oven until finished.
Subsitutes
Use canned white meat Chicken instead of Chicken breast. (For quicker prep, or to use up canned Chicken from food storage.)
