PUMPKIN CHOCOLATE CHIP COOKIES

1 cup shortening

½ tsp salt

1 ½ cup sugar

1 tsp baking powder

3 Eggs

1 tsp soda

2 cups pumpkin

1 tsp vanilla

½ tsp cloves

3 cups flour

½ tsp cinnamon

12oz pkg semi-sweet chocolate chips

½ tsp nutmeg

Cream sugar and shortening. Add remaining ingredients. Drop onto ungreased cookie sheet. Bake 375 degrees for approx. 15 minutes. Yield approx. 40 cookies.

Shanna tips:

* Margarine or butter could be substituted for shortening. Smart Balance (reg) for cooking and baking is a healthy blend margarine that works in this recipe. Do not use Smart Balance Light.


For a moist cookie do not over bake.


This is a recipe that is adaptable to individual preferences if any of the family do not like chocolate chips. Nuts, raisins, etc.are options.
